Healthy Fajita Nachos
The scoop
You don’t always think of Nachos as a healthy food. But I have mastered recreating my favorite dishes into more healthy versions. This dish was inspired by mycrazyblondlife blogger. I took her version (which is fabulous) and switched out a few of things to fit our tastes and healthy preferences and it turned out wow!
This dish has the flavor of chicken fajitas which we love. I substituted organic multigrain chips for corn chips, and Greek yogurt for sour cream and went light on the cheese to lighten the recipe up a bit.
Ingredients:
- 2 Organic Chicken Breasts (split into 4 pieces) 
- 1 Green Pepper 
- 1 Red Pepper 
- 1 Pablano Pepper 
- 1 Jalepeno Pepper 
- 1 Yellow Onion 
- Olive Oil 
- Taco Seasoning - I sliced every thing up in even sizes, tossed them in olive oil and sprinkled on the taco seasoning. Then put them in a 425 oven for 20 to 25 minutes. - When done I chopped every thing into bite size pieces and put them in an iron skillet. Then topped with the following ingredients. 
- 1 can of Black Beans (rinsed and drained) 
- Black Olives (sliced) 
- Chopped Green Onion 
- Chopped Tomatoes 
- Shredded Cheese (Your choice, I used cheddar) - Put it back into the over until cheese melts (5 to 10 minutes) - When the cheese is melted add the rest of the ingredients. 
- Greek Yogurt 
- Cilantro 
- Surround with the chips! 
We had this sitting in the living room at the coffee table while we watching the Super Bowl. It was a hit as was the game!
